Chef James DeSisto, Executive Chef and Owner of Laboratorio Kitchen in Montclair Center presented a check for $1000 to the Human Needs Food Pantry of Montclair to combat hunger in Montclair and surrounding communities. The check represented the proceeds from a series of events to directly support the supplemental nutrition programs at the pantry.
“Hunger is a very real issue that affects many more of our neighbors than most of us realize.” DeSisto said as he was planning th dinners. The Human Needs Pantry serves seniors, disabled, and other at risk neighbors in the Bloomfield Ave corridor from Bloomfield to Montclair, from Verona to the Caldwells. “So many of us think ‘that can never happen to me’ but the reality is that one serious illness or job loss can put me, or you, or your neighbor in need of assistance” said DeSisto.
On Tuesdays in June, a percentage of sales from each guests dinner was donated to the pantry. Additionally, in July, Laboratorio hosted a special 3-course prix fixe dinner that featured a selection of favorite items from the regular menu. DeSisto’s signature dish, Atlantic Salmon with charred watermelon, vanilla bean vinaigrette and arugula salad was as well the house made Burrata Cheese salad. It is served with truffled tomatoes.
Earlier this summer, the Human Needs Pantry shared the news that for the first time in a long time their shelves were bare. Donations typically drop off in the summer months because so many supporters travel this time of year – this year the contributions dropped off earlier than in the past. Upon hearing the news about the struggles the pantry faced, DeSisto took action to help.
Before taking over Laboratorio in late 2014, Chef James DeSisto, a graduate of Johnson and Wales, spent time in the kitchens of Emeril Lagasse, Mitchell Alzholz of the Highlawn Pavillion and Chopped Champion Chef Michael Dilonno of Avenue Bistro in Verona. When he is not in the kitchen DeSisto loves to spend time with wife and daughter trying new foods that celebrate the cultural diversity of New Jersey.

John Lee is Black Tie and Flip Flops’ Raconteur-In-Chief: the World of food is his playground ~ the whole world! Having a Navy Dad gave John the passion to discover the world. Whether in one of Mr. Boeing’s flying machines, as an armchair traveler with a great book, or a plate beaming with the exotic flavors and fragrances, his day is all about discovering the world and sharing the stories with everyone he meets.
John cut his teeth in commercial kitchens starting in high school and continued into his undergrad years, then the media bug bit. After University he spent time at the Washington Post Company before jumping on the first internet wave in the 1990’s at some of the major players of the era. John also established himself as a culinary instructor where his style of cooking was first called “Comfort Food Remixed.” Don’t get him started on Disney Dining, but yes, he tried “the grey stuff” and it is delicious. He is also the Chair of Taste of Montclair and Montclair Restaurant Week. John jokes that he’s staying in NJ because he didn’t have enough miles to trade in for a return ticket home to San Diego, but we think he likes it here.
