Tomato Soup is an American classic. While variations have existed for centuries, it was not until Joseph Campbell introduced condensed soup to the public in 1897 that it became THE American comfort food. In the 20th Century its was Tomato Soup that made Andy Warhol a household name. And on cold winter day it is tomato soup that makes everything right as rain.
Since opening in 2012 Pig and Prince in Lackawanna Plaza in Montclair has pushed the envelope and succeeded where so many others just succumb to their “can’t do” psychosis. From its zip code, its physical plant, its menu, and its bar, Chef Mike Carrino has proven the nay-sayers wrong again and again. He does it again today with his Tomato and Bread Soup that just happens to be vegan. If you haven’t been there yet, go – there is always a surprise on the menu.
Chef Mike Carrino’s Tomato and Bread Soup uses ingredients most of us have in our kitchens. Instead of cream, the silky texture of this soup comes from olive oil and French bread. The recipe calls for fresh tomatoes, but jarred tomatoes will work well.
Tomato and Bread Soup
3 lbs large tomatoes
½ cup extra virgin olive oil
3 cloved garlic, chopped
Leaves from 1 bunch of fresh basil
1 loaf 2 day old French bread
- Remove seeds from the tomatoes
In a heavy bottom pot (like LeCreuset) sauté the garlic, tomatoes and basil in ¼ cup olive oil until the tomatoes lose their color
Break the bread into chunks and add to the tomato mixture
Add enough water to cover the ingredients
Add remaining oil
Simmer for 30 minutes
Using an immersion blender, blend the until it is smooth, or transfer the ingredients to a blender and blend until smooth. Process in batches if necessary.
Season with salt and pepper to taste.
A drizzle of olive oil and a garnish of some torn basil leaves complete the dish.
